In March of 2010, my doctor told me I should look at eating vegan or at least vegetarian.  Why would this doctor whom I'd met perhaps two times in my life and he knew hardly anything about my eating habits recommend such a thing?   Well, let me tell you quickly if I can.
I was hospitalized a year prior for what doctors thought was a heart attack and since I was in my late Thirties, I was traumatized to be treated for 4 days for a heart attack and it turned out to not be one after all. There was no diagnosis.  Six months later I went back to emergency for the same symptoms and eventually it subsided and I was sent home.  I was referred to ultrasound to check for gallstones. My sister happened to be the ultrasound tech at the time and since she had been training with neck nodules, decided, by chance to check my neck after my clear gallstone check. My neck turned out to be questionable and ultimately surgery was decided upon.  My second opinion doctor whom left a Major Medical Hospital in our area to become a homeopathic doctor and was vegan himself, said it would help me to eat vegan, especially if it turned out to be cancer.  At the time, knowing it would be difficult, it was the only control I seemed to have in my life at the time.  The morning after my surgery, the neck surgeon came to talk about my thyroid cancer that she had removed.  I knew that I was supposed to remain in the hospital for about 4 days to 2 weeks, depending on how quickly they could get my calcium levels back to normal. (Removing a Thyroid will completely throw levels off and the norm is generally 4 or more days.) Well, to my surprise, and to hers too, she told me how this is not the norm that my levels were perfect, just 12 hours after surgery and that maybe once every 10 years or so, she'd see a case like mine.  She said there was no reason for me to stay and sent me home.  Believe me, everyone was shocked to see me walk through the door to my and my husband's restaurant right after a surgery like that.  I had a Big Huge Smile on my face.  And like I told the doctor and everyone I see, I know it was the vegan diet.
