Lemon Caper Tartar Sauce

 


 
 
 
 
     The Last few days have been completely lazy days. I just returned home from Austin, Texas.  I was thrilled I was able to attend the Vida Vegan Con for bloggers.  What an incredible learning event.  I can't say enough about the awesome and knowledgeable teachers, the great vegan business and CEO's of the companies, and the many volunteers that put the event together.  My only regret...this was the last put on by this group and I wish I had found them three years earlier.
     Well, I made it through the convention, Pneumonia and all.  Fortunately I was on the tail end and felt much better after a trip to the doctor but it's been very difficult to get back into the groove of things. I am so happy I was able to pick up a few quick items that could be quickly assembled into meals once I returned home and was resting up from the trip. 
     Since I always have my pantry and refrigerator pretty much stocked up with items to make sauces, syrups, pastas, etc.,  it was easy enough to whip up a nice spread for my fish-less sandwich.  And the bagels...nice touch eh?   Well, it's all I had in the freezer, but it worked!   
 
 
Lemon Caper Tartar Sauce Recipe
 
1/2 Tbs Sour Cream (I used Better Than Sour Cream)
1/2 Tbs Veganaise
1 Tsp Horseradish
1 Tsp Capers
1 Tsp Lemon Juice
1 Tsp Chopped Italian Parsley
Dash salt and Pepper to taste
 
Mix all ingredients and spread on Grilled bun or on tofu.
 
Pictured above was my Fish-less Bagel Sandwich made with Gardein Fish-less fillets, Daiya Havarti Style Nut cheese, and Bagels grilled with vegan butter and a nice heaping spoonful of Lemon Caper Tartar Sauce.  This Sauce would also be great with a bit of Sriracha sauce in it and drizzled over Vegan  Fish-less Tacos. Click here for another fish-less recipe-   More Fish-less Tacos

Vegan Breakfast Sandwich


 


Stop what you doing right now. Gaze into this picture. You're getting hungrier and hungrier!  Salivate and then get the goods to make this today!  Trust me, you'll want this for breakfast, lunch and dinner.  I'm not one for bragging but I'm in Love with this Vegan Breakfast Sandwich that I made with a yummy Vegan Horseradish Hollandaise Sauce.   I ate one.  Then another half.  And now...
I crave them all the time.
Sometimes I really luck out with a recipe and by far, this is one of my most favorites eva!


Vegan Breakfast Sandwich recipe~

Brioche Buns, Biscuits, English muffins or even pancakes will work
Gardein Breakfast Patties
Firm Tofu, sliced into 3/4- 1 inch squares
Vegan butter, softened
Salt and Pepper
*Horseradish Hollandaise Sauce (*Recipe below)
Optional: a vegan cheese slice

Heat a fry pan over the stove on medium heat. Butter each inside of the Brioche or your favorite bread and grill in fry pan a few minutes until the bread is nice and toasted brown. Set aside. Add Gardein Breakfast Patties and Grill a few minutes on each side until hot. Set Aside.  Spray one side of tofu with a cooking spray, sprinkle with salt and pepper and fry salted and peppered side down about two minutes until it has a nice browning to it. Spray the top, sprinkle with more salt and pepper and carefully flip to grill the other side.
Assemble the sandwich with one patty, one piece of tofu and about two tablespoons Horseradish Hollandaise sauce....
Drool...then eat...then about now Nirvana will take over your body!  It's truly life changing.  And for those meat eaters in your life, they would never miss an Egg McMuffin after having one of these!






Horseradish Hollandaise Sauce~

1 Tbs vegan horseradish sauce or horseradish Mayo
1 Tbs nutritional yeast
2 Tbs lemon juice
1 pinch salt
3 Tbs rice milk
2 Tbs soft tofu
2 Tbs melted vegan butter or margarine

Combine all ingredients, except butter, in a high powered blender until creamy and smooth.  Add melted butter and blend again. Pour into sauce pan and cook over high heat, stirring frequently until it starts to thicken a bit.  Use it to compliment Vegan Breakfast Sandwiches, Vegetables and Toast.

Strawberry, Swiss and Onion Grilled Cheese Sandwich

 
I've been buying daiya cheese for about four years now.  When I first went vegan because of my thyroid cancer diagnosis (I'm completely cancer free now yes!) and I had missed cheese like nobodies business,  and I was told I could shop a couple stores with dairy free cheeses, yogurts, etc.  Ever since, I've been a vegan cheese-aholic and love creating exciting, flavorful and fun food recipes. And there was love at first sight when I found these slices of Swiss, Cheddar, Mozzarella Style melting slices. Since then, it's been heavenly creations ever since!
Last month I noticed daiya was having a grilled cheese sandwich contest and I decided to enter it. Here is my entry below.  It's easy and delicious.  Enjoy!
 
 
 

Strawberry, Swiss and Onion Grilled Cheese Sandwich
 
2 slices Swiss Style Slices
2 large sliced strawberries
1 sprig fresh marjoram
2 vegan tortillas
1 tbsp chopped pecan
1 oz sliced onion
 
In a pan or on a griddle sprayed with non-dairy cooking spray, add tortilla and top with all ingredients except Swiss Style Slices.
Break up Swiss Style Slices into small pieces and sprinkle on top.
Place second tortilla on top and press to cook.
 
Let cool for 1-2 minutes. Eat flat or slice and roll for a cute presentation.

Roasted Red Pepper Sandwiches

 There is nothing better than freshly made roasted red peppers.  Even better, are roasted red peppers in a sandwich.  But when you need a super quick meal, it's always nice to have a jar of roasted red peppers on hand to make a super quick and easy and oh so tasty meal.  Try it, you'll like it.  No, you'll probably love it!

Roasted Red Pepper Sandwiches
Garlic powder
Daiya Provolone Style Slices
Roasted Red Peppers, if canned, drained for about 5 minutes
Flatbread or your favorite bread

 
Lay out your flat bread. Layer with roasted red peppers. Sprinkle with a little garlic powder.

 
Layer the top with Daiya Slices. Add another flatbread on top.

 
On a grill or pannini maker, cook for about 1 to 2 minutes.  Let cool slightly and slice into pieces.

 Roll 'em and eat 'em.  The end. 
Of course it's only the end until you make another, and another...you get the point. Yum!
