Hot Spiced Nutty Nog




My lovely daughter and her awesome hubby stopped by for an impromptu visit.  It was great. I do love my company and  I did happen to get out of my jammies before they arrived (it was already passed 2pm). When they do come to visit, normally I always make something new for them to try since they are most definitely two of my best taste testers around.  And I know my daughter loves the comfort of home where she knows momma will make her the best Vegan meals, drinks or treats around. And that my friends, brings me absolute joy!
My daughter had told me she wanted to stop by so she could try and get into the Christmas mood by seeing the décor of the house. And since I had been wanting to make my own quick nog recipe for awhile, and what couldn't be more Christmas-y but Nog, I decided today was the day for it.  Even though it is more like a delicious coffee-less latte, I think you will really really like this hot holiday drink. It's really quick and easy and is not only a Fall or Winter Drink but I could lap this delicacy up all year long, even cold during the summer months.  So try it and I hope you like it!

Hot Spiced Nutty Nog Recipe:

1 Quart Vanilla Almond Milk
2 Cinnamon sticks
1/2 Tsp Almond extract
1/2 Tsp Vanilla
5 Tbs Brown Sugar
1/4 C Spiced Rum
Dash of Nutmeg for the top
 
Put all ingredients except Rum and nutmeg in a pot on the stove and cook over high heat until bubbling and then simmer for a few minutes stirring a couple of times. Turn off stove and stir in Rum.  Serve Immediately with a sprinkle of nutmeg.   You can increase the recipe and heat it then add to a crockpot to keep hot for serving during a party too.  Be sure to add the alcohol and nutmeg to the crock pot right before the party.  Enjoy!

Berry Vodka Shot


Someday you just have to indulge a little.  And this little Berry Vodka Shot made with none other than Tito's vodka is also a slight nod to the amazing time I had at the Vida Vegan Con blogger's convention a few days ago in Austin, Texas. Yes, this is the birthplace of Tito's vodka and a mecca for Vegan Food Trucks galore. I was in heaven.  Now I'm home, work is calling, kids are calling, my dogs are demanding every last ounce of my attention and I'm mentally wanting a little break.  So as I sit here sipping this berry concoction with a fresh juiced taste, I'm waiting for the next little break in my day to have another one of these little babies.  And to that my hubby even said...Ditto! (Or should I say Tito?)

~Berry Vodka Shot Recipe
4 ounces Chilled Vodka
2 ounces Simple Syrup
5 Chilled Strawberries
1/2 Cup chilled Blueberries

Blend for a few minutes and pour into sugar rimmed glass. Sip and Savor.  (*note~ this will get thick if you let it set for too long.)

"Coco-Rita" Vegan Margarita

Recently Hubby and I went to the beach to have dinner with some friends. They took us to this gorgeous Spanish restaurant and told us we had to try the coconut margarita. One sip and I knew I'd have to create this recipe at home. I lucked out and after one attempt, I think I nailed it. Here is my version of a Coconut Margarita "Coco-Rita" that I know you'll love!

This baby is super simple and easy to make. Trust me...
It'll be your new favorite adult beverage.



Coco-Rita recipe

1 can coconut cream (about 14 ounces)
1/4 c. sugar
1/2 lime squeezed
1/4 tsp vanilla bean paste or 1/2 tsp high quality vanilla
1/2 c. tequila
1 1/2c. ice
Rim glass with lime rubbed along edge and dip into superfine toasted coconut mixed 1/2 and 1/2 with white sugar

Put 5 first ingredients in blender and blend for about 3 minutes. Add ice and blend until super smooth. Pour into prepared glass. Drift away to the tropics with this delightful heavenly flavor.

Pineapple Upside Down Cake Martini

How about a little New Year's Fun? Need to Celebrate? Need to unwind or simply do you want to treat yourself to a little sweet drinkable treat?
 
Here's a sweet little delightful beverage I created about a year ago or so.  
 

Pineapple Upside Down Cake Martini

1/2 c. pineapple juice
1/4 c. cake or whipped cream flavored vodka
1/8 c. coconut milk
Shake well with ice in martini shaker.
Slowly drop cherry with a little bit of its juice down the side of the glass so it settles on the bottom.
You can add a little bit of whipped coconut cream or vegan whipped cream to the top also. Add some fun  candy sprinkles for added fun.
 
Want to make this Non-Alcoholic? No worries.  Omit the Vodka and subsitute with Coconut water.  Add 1/2 tsp vanilla....
This will have a taste of its own, more like a refreshing water, but none-the-less...Yum!

Nutty-Mallow Vodka Shot


Nutty~Mallow, for when you crave a little peanut butter and a little marshmallow, in an adult sort of way. Delightful, but potent. Yummy, nutty and smooth. Save some in the refrigerator and have a power punch pudding with a kick. That's all I've got to say about that...now for the recipe~

Nutty-Mallow

1/2 cup Marshmallow vodka
1 Tbs peanut butter
2 Tbs coconut milk (the cream off the top)
1 tsp agave




Mix peanut butter and vodka until mixed well and smooth.

Add coconut cream, agave and mix well.


Pour into three shot glasses. Enjoy or refrigerate for a delicious creamy pudding. Beware~potent!
